Kousui (幸水) in Japanese means “Good water”. It is a popular variety of Japanese pear, and is known as one of the “Three Waters of Pear” along with “Hosui” and “Shinsui.” It’s succulent crunchy flesh and high sugar level contributes to its popularity. Also, it’s pleasant flora scent and rich juiciness makes an refreshing entrance with all the cooling abilities that keep you cool-down internally and quench your thirst.
Using optical sensor, it will be graded into different grades depending on sugar content, where 13% and above brix will be branded as the cream of the crop.

豊水 (Hosui) was born from the crossing of the “Kosui” and “E-33” varieties. The size is slightly larger than “Kosui”, and with golden skin overall.
It has a strong sweetness and gentle acidity, and the flesh is fine-textured with plenty of juice. You can enjoy the crispy texture and sweetness peculiar to pears.

Nan shui boasts the highest sugar content among the 150 varieties of Japanese pears and is currently rank 3rd in terms of the best quality.
It is extremely sweet and has an average sugar content of 14 to 15 degrees, where normal varieties such as Kosui are usually around 12-13 degrees.
“Taikoban” is ranked at the highest rank among the grades such as Excellent, Good, and Unmarked. The latest optical sensor selects the maturity and sugar content, and only those that meet the standards are certified as “Taikoban” grade. This is a limited edition product made by selecting only those with a higher sugar content from the popular Nansui, which is popular for its sweetness, and is rare and difficult to obtain at ordinary stores.

La France was discovered in France in 1864, but is currently rarely cultivated in Europe due to unsuitable climate. It was introduced to Yamagata Prefecture and currently accounts for about 70% of the production volume and is a representative of pear in Japan.
La France is characterized by its overflowing juice and elegant, melty creamy texture. It is also called the “Queen of Fruits” because of its rich taste. Each pear is at least 400-450g each with green skin color which turns yellow with brown motted spots which developed over time when ripening, which may attain sweetness as high as 15 brix level. They are usually available only for a short period between October to December, so try out while they are in season!
