“Komitsu こみつ” is a registered trademark of the former Tsugaru Ishikawa Agricultural Cooperative (currently JA Tsugaru Mirai Ishikawa Core Branch), the govt organization in charge of improving the quality of the apples and finished them into the best quality apples.
The farmers first increase the sugar content of Komitsu to around 16 degrees, and letting it ripen on the tree further until the fruit falls before harvesting. This is to maximise the honey within the fruit. Those who did not meet the mark will be branded as “Koutoku” and only a small percentage of the batch can be accepted as “Komitsu”. Hence, the apples are very limited in quantities and highly sought during its season.
