When speaking of Niigata’s Persimmon, one could easily think of the famous variety, JA Okesa Persimmon, aka Hacchin Persimmon (八珍柿). It’s major production area is in Sado City, off-island to Niigata prefecture.  As seedless persimmon are considered rare and unique, it is locally named as the 8th Wonder of the World. Being an astringent variety, they are commonly treated with Japanese Shochu, which removes astringency and giving a sweeter and richer flavor compared to sweet persimmon varieties.
