Japanese Elizabeth Melon (Small)
Elizabeth Melon is a “no-net” type of melon with an evenly colored bright yellow-colored skin. It’s size is petite, and has a spherical shape to a slightly vertically long oval shape. The flesh is white and thick, very juicy, has a firm crispy texture, reminiscing a honeydew, but with a more elegant taste and high sugar content of up to 15 degrees.
It is common to cut the melon in half vertically and then cut it into a boat shape, but for Elizabeth melon, it is recommended to cut the equator horizontally first as the lower half of the fruit is sweeter. Since there is a lot of juice around the seeds, you may scoop with the seeds using a spoon and filter the juice out into another holder.
