Sato Nishiki (佐藤錦) is the most well-sought cherry variety during its season due to its pretty appearance and high sweetness. It is first discovered in Yamagata, Year 1923, after cross-breeding “Napoleon” and “Yellow Jade” varieties and later grew in popularity over the years, calling for widespread production in Japan. It has a soft jellish texture but high sugar content and juice.
It is available from end March to end-June, and is one of the most-sought choice as gifts in Japan.
