Nicknamed the “Queen of Cherries” and sometimes called the “phantom cherry”, Gassan Nishiki is one of Japan’s rarest and most prized cherry varieties. Grown only by a handful of expert farmers in regions like Yamagata Prefecture, Yamanashi, and Hokkaido’s Yoichi Town, this golden-hued gem is exceptionally difficult to cultivate and nearly impossible to find in the general market.
Each cherry boasts a vibrant yellow skin with a soft sheen, a distinctive heart shape, and an average size of 2L–3L (9–15g). What truly sets Gassan Nishiki apart is its exceptionally high sugar content and almost zero acidity, making it shockingly sweet and juicy — even to those skeptical of yellow cherries. The flesh is firm, yet tender, delivering a satisfying bite and a gentle burst of natural sweetness with every piece.
Due to their delicate nature, Gassan Nishiki cherries bruise easily — even the leaves from their own trees can cause browning during ripening or transport. As a result, only a limited number of perfect fruits pass strict visual grading and are offered in luxury gift boxes or high-end outlets. Their rarity, short harvest season (late June to early July), and extremely low yield per tree add to their almost mythical status and only available to the lucky few.
