Japanese Purple Sweet Road Satsumaimo (Sweet Potato)
“Purple Sweet Road” is a a purple-flesh sweet potato produced in small quantities in Chiba Prefecture, making it a somewhat rare variety. It was bred and developed by the National Agriculture and Food Research Organization, an organization that conducts research and development in agriculture and the food industry. Purple sweet potatoes are generally not as sweet as yellow flesh ones. However, “Purple Sweet Road” is sweeter than other regular purple sweet potatoes.
The flesh of this sweet potato is lighter in color than other purple sweet potatoes, but turns deep purple when cooked. The flesh is a little powdery, so it is more fluffier in texture than sticky & sweet sweet potatoes. The recommended way to eat Purple Sweet Road is by baking, steaming and making into sweets & snacks.
